I've burnt my fingers (6 fingers affected in total) when I switched from sugar to isomalt for preparing pulled sugar decorations since texture and temperature is a bit different and I misjudged. A colleague recommended me some herbal chinese medicine for burns called "Ching Wan Hung", and it is fantastic. Immediate pain relief after being applied, now after one day my hands are almost back to normal, no pain at all unless exposed to pressure and heat.

Just wanted to share, since this thing is so much better than any conventional burn ointment I have tried.

It has a lengthy list of plant ingredients, and it stinks horribly. But it works Smiley)

I should scan the package insert, translation is quite entertaining. Apparently that stuff is commonly used by chefs, and quite famous, at least in China. Just wanted to share, if you come across that thing, it definitely  works. I wash my hands before going home since I don;t want unknown botanicals around cats, but even after 2 half-day applications at work, burns are visible on only 2 fingers out of 6 that were burnt, water no longer hurts, still some sensitivity to pressure and heat but much, much better. And for 17 HKD or about 2 USD for a big jar of stuff Smiley

It looks like the plants used in it vary some with different manufacturers, but they all have a few of these in common:

Plant list on my jar is even longer than this, but the stuff is amazing.

I made a big mistake since this was the first time I worked with isomalt which is cooked to 171C, and normally I work with just sugar which is cooked to 153C.  Sugar which looks the same as isomalt (I go by texture to judge when it is right time to pull) is actually colder and less sticky. Ouch! And to make things worse, I got over confident over time, so now I usually don't keep icy water on hand when working with sugar. Next time I sure will, and this stuff as well.

This is what got me in trouble:


Next time I'll definitely be more careful, but I will be working with this again as soon as my hands are fully healed, the results definitely seem worth it.

Edited to add: spun sugar or isomalt doesn't require touching it by and anyway, and I really like the result, especially the cone, it is a bit tricky since you have to work fast to get enough threads, then flatten them and bend the flattened disc into a cone while threads are still warm.

Those pieces are absolutely amazing.  Sorry you injured yourself trying to make them, but hope your next attempt is less painful.

You have a real gift with this, thanks for sharing.  Looking forward to seeing more pictures of the pieces that you make!

What is truly amazing is that burns on right hand are gone, there is barely something visible on left hand, and this is day 3 since I burnt my hands.

Thank you for comment about my sugar pieces!

And since you asked for it: bonsai wisteria cake (hazelnut sponge soaked in milk+bailey's, chocolate+coffee cream), "grass" is coconut with green tea powder, wisteria is made of gumpaste

Oh that butterfly is just gorgeous (my faves are butterflies). I just love the way your kitchen is set up and the colors too. Is your kitchen counter blue granite or something like that? Just beautiful too.

Should you ever go into business for yourself, please by all means let us know. I know I would definetly be a lifelong customer as your creations are just so unique.

JJ, kitchen counter, kitchen floor and bathroom floor are all blue marble. Kitchen is my own design, custom made to get the most out of limited space available. Flats in Hong Kong are very small with tiny kitchen.
