That butterfly is simply outstanding. Agree with JustMe - it looks like it was ordered by royalty to be made - so regal looking. Great job, love it.

LOL ALek, it takes 15 minutes longer?   Grin Im afraid it would take about 4 hours longer for me, and once I was done it would be a big pile of what looks like maybe cake, lol  Its very pretty!

Those are really nice, Alek. I absolutely LOVE chestnut puree but I can't seen to find it consistently around here. A cake made with the stuff would be just fabulous.

I love chestnut puree, too. The low-calorie chestnut dessert is made with chestnut syrup and Bailey's and agar agar, and that one is almost gone, too. I think I'll need to make another one this weekend Smiley

Hey, bug and alek, be glad you two don't live in the States.  Chestnut puree is a very rare bird around here.  I like the stuff too, especially as a cake filling, but can never get it at all, except by paying zillions in gourmet food markets, or occasionally at the holidays.  The chesnut puree with Bailey's (one of my favorite flavors in the whole world) sounds heavenly.

Alek, do you have any good recipes for agar agar desserts?  I am a vegetarian, so don't eat gelatin if I can help it, but other than a few pre-packaged things, I'm sadly lacking for desserts like that.

For the chestnut dessert in the photo, I just put 4 g agar agar in 500 ml of cold water, brought it to boil, poured it into prepared chestnut syrup+bailey's mixture, mixed it and poured it into a mold. After it has set, I glazed it with orange-flavored apple glaze (apple jelly+some natural orange flavor). Not sure if you can find chestnut syrup over there. Since bf likes agar more than gelatine, I think I'll be making a lot more agar agar desserts in future.

Catbird, if you really want the puree, I can send you a few cans. I can find it in the Italian markets here and they run about $5-6/can (I just can't always find the brand I like). Don't know where you live, but I'm just across the border.

I am just bewildered that you have time to do this every weekend and each time, you can come up with something completely original! I don't think I've seen two designs that are remotely close. I wish I could do something like this to relax, but it would be just the opposite for me. I made and decorated my own wedding cakes (gum paste flowers) and cupcakes (filled with a fruit cream, decorated with cream cheese and fondant butterflies and flowers) and it darned near drove me to the nut house.

catbird for gelatin free desserts at Whole Foods they now have cherry and orange jello cups. They taste just like jello but without the gelatin. It is in the dairy section right above the milk.

Back on topic - as always Alek you outdo yourself and original everytime!
