Happy Thanksgiving to all. Thanks for all the hard work.
Anyone need a good Jello salad recipe?
Cranberry Salad Ring
4 (3-ounce) packages black raspberry-flavored gelatin (Jello)* *I use 2 packages of cherry and 2 packages of strawberry 2 cups boiling water 1/2 cup cold water 2 cups fresh cranberries, ground 2 oranges, unpeeled, cored, and ground 2 apples, unpeeled, cored, and ground 1 (15 1/4-ounce) can crushed pineapple, undrained 2 cups sugar 1 cup chopped pecans
Dissolve gelatin in boiling water. Add cold water, and chill untill consistency of unbeaten egg white. Combine next 6 ingredients; mix well. Fold fruit mixture into gelatin mixture. Pour into a lightly oiled 10-cup ring mold; chill until set. Unmold on lettuce leaves. Fill center of ring with mayonnaise, and garnish with orange slices, if desired.
Yield: 18 to 20 servings.
This makes a large salad. You can use a little less sugar, if desired. I cut the recipe in half, and chill it in a 9" x 15" Pyrex dish. I don't do the lettuce leaves, mayo and orange slices unless it needs to look pretty. You can make this up to two days ahead as it keeps well in the fridge.

Happy Thanksgiving all. I know we'll be taking a break, but keep working on ways to improve things for all our fur-kids between cooking, visiting, and enjoying your entire families. 3cats
