This is the meat section, so I don't have any good recipes to offer, but someone mentioned using chicken in place of sausage.  I used to love the turkey sausage that I bought at the food co-op after I quit eating mammals.  I would fry it up with organic sauerkraut, yummm!

(I grew up in the southeast, so sausage, pork chops & ham are what I miss most)
