Fizzy, the marinade recipe came out gorgeous!  I cooked some chicken breasts and they came out tender for a change.  (Yes, don't ask what normally happens.  Grin)  We will be doing this one regularly, thanks!

Here's another chicken recipe.  I grew up with this one.

JAC'S BBQ CHICKEN

1/2 C butter
1/4 C lemon juice
2 T horseradish
2 T vinegar
2 T catsup
2 tsp salt
1 1/2 tsp worcestershire sauce
3/4 tsp tabasco

Heat all until butter is melted.  Spoon over 8 pieces of chicken.  Bake 1 to 1 1/2 hours at 350.  (I think it's best when the chicken is allowed to brown, so the longer the better.)

Also excellent as a baste for grilling chicken outdoors.

Mmmmm, BBQ with horseradish! I think I will have to try that.

I thought some forum members might like what I made for brunch this morning, very much in season. So good I want to eat it all over again, and I just got done  Grin

Zucchini Pancakes

Prep Time: 15 mins
Serves: 4-6

Ingredients
about two 8-inch-long zucchini or similar summer squash (2 to 2 1/2 cups when shredded)
4 large eggs
3/4 cup all-purpose flour
1/2 teaspoon granulated sugar
1/2 teaspoon salt
3 tablespoons extra virgin olive oil (or other vegetable oil)
4 teaspoons baking powder
butter or margarine, to rub griddle

Directions
1. Wash and shred zucchini with food processor or on a fine shredder (do not peel).
2. In a large mixing bowl, beat eggs; add shredded zucchini and mix well using a fork.
3. Add flour, sugar, salt and olive oil and stir well to blend.
4. Finally, add baking powder and mix using a spoon (Batter consistency will be thick, and after a minute or two, it will foam. Don't be alarmed).
5. Preheat griddle to about 400-425 F.  If using a heavy duty frying pan, heat to medium-high heat; adjust heat if necessary.
6. Rub griddle or frying pan with butter or margarine before cooking each batch of pancakes.
7. Spoon batter onto hot griddle (about 3-4 tablespoons for each pancake).
8. Cook until bubbles on the top of the pancake almost stop, about 1 1/2 minutes; turn pancake over and continue to cook for another 1 to 1 1/2 minutes or until pancakes are done.  They should be browned on both sides and cooked through.

Serve with sour cream or plain Greek yogurt and a few twists of fresh-ground black pepper.

If you are looking to put something sweet on them, I'd suggest something sweet/sour like cranberry applesauce, or maybe jam. To me, they taste better with some tartness added. But who knows--you might like them with maple syrup.

I'm sure you're right, something savory rather than sweet.  Someone gave us some blackberry jalapeno preserves which might be good or I might try a roasted tomato salsa on top.  But I will also try one with maple syrup and report back Grin  Now my mouth is watering LOL!

Your recipe reminds me of a fantastic zucchini soup that my mom made.  I'm going to have to see if I have the recipe stashed somewhere.  I think it has bacon in it.  Is there a vegetarian substitute for bacon?

DH has a co-worker who is bringing zucchini and yellow squash into the office.  Free food LOL!

Yum Yum Yum!  We had catbird's Zucchini Pancakes for dinner last night.  "Tell catbird Two Thumbs Up from DH"  LOL.  He loved them, as did I.  It was too hot to make the tomato salsa so we used the Blackberry Jalapeno preserves that my SIL gave us for Christmas.  Wow, it sounds weird but it was really good with the pancakes!  The preserves also had sweet red pepper, vinegar, and sugar so we had the tart along with the sweet and spicy.  Oh, I also had one pancake with maple syrup.  I just had to see, and it was fine but the preserves were better.  DH also spread Chobani Caramel with Pineapple yogurt on his and loved it.

I wouldn't hesitate to make these for dinner year-round.  Thanks, catbird!

Glad you enjoyed them, Fizzy and Fizzy's DH! I think that the blackberry jalapeno preserves sound like a wonderful complement. And the best part is, they are easy to make!  (I've been known to add a little Parmesan cheese to the batter, too, but then, I'm more the salty/sour type than sweet LOL.) I have never eaten them with tomato salsa, but may try that next time.  Good idea!
