Hey, I'm glad that Cosmo (it is Cosmo, isn't it?) liked the zucchini pancakes, too.

(I should see if any of mine will eat a bit the next time I make them. The little buggers think they are too good for home-made cat food any more. Actually, they seem to think they are too good for a lot of things these days.)

That is Cosmo! He was actually eating the grated raw zucchini. I was surprised that he ate it!

Here's a recipe for those of you who are willing to go vegan for a day. Don't run away, it's comfort food - it's MAC N' CHEESE!  Hell yes, it's raw (the cashew part, not the pasta) and it's absolutely delicious!

Ingredients:

16 oz of elbow or shell pasta of choice

For the cheese sauce:

3 cups raw cashews
?6 T. fresh lemon juice
?1.5 - 2 cups water
?1 tsp. sea salt (less or more, to taste)
?1/2 cup nutritional yeast
?pinch chili powder?
1 clove garlic
?pinch of turmeric
?pinch of cayenne pepper
?1 tsp. mustard (dijon or yellow)
*optional add-ins: roasted broccoli, sauteed mushrooms, spinach, etc.

Use a food processor or blender to process the cashews first, until they are finely ground, or ideally, a nut-butter-like consistency. Once your cashews are thoroughly processed, add the rest of the ingredients and process until smooth.

Cook and drain your pasta. Return pasta to the pot and mix with the cheese sauce. Serve immediately. Enjoy.

That does sound good, Julia.  I love cashews, but not cheese!  I just might try this.  I don't have any nutritional yeast, I wonder if I could leave that out?

I wouldn't , Fizzy. It's the nutritional yeast that gives the sauce that cheesy and nutty flavor.

I'll have to go look thru my stuff, merrihart.  My family is not as fond of it as I am so I haven't made it in a while.  I found these online and they look tasty and have good reviews.
