They do sides and mixed quarters and a few different sampler packages. Also, easy to deal with and you can email to workout special ordering to suit your needs. I'm going to see if I can get larger lamb bones for the Dot.tee one and am thrilled I can order organs already ground together with the tongue. I still have that big ol' tongue in my freezer. Scared of the darn thing! Now that I think about it, I might be able to handle it with the hatchet while frozen
